HIGH PROTEIN, HIGH FIBRE, CHOC CHIP COOKIES!

 

A wholesome, high protein, high fibre choc chip cookie that the whole family can enjoy!

These cookies are another staple in our household and are a healthy take on an old favourite. They are a great snack if you want your kids (or you!) to still treat yourself to a cookie from time to time but wanting something a little more nourishing. We rarely have prepackaged cookies so my little ones love helping bake (and eat) these.

The not so secret ingredient in these cookies are chick peas! But don’t knock them ‘til you give them a go!

Here’s what you’ll need:

INGREDIENTS:

  • 1 can chick peas - well rinsed.

  • 3 tbsp coconut oil

  • 1/2 cup natural nut butter (can substitute for butter if you want nut free)

  • 1/4 cut rolled oats

  • 4-5 pitted medjool dates

  • 1 teaspoon vanilla extract

  • Choc chips - This amount really varies according to you! I wont tell you how many choc bits you need to add, I’ll leave that up to you. I use dark choc melts which I chop into smaller pieces.

  • Optional - If you’re new to refined sugar free baking you can add 1 tbsp maple syrup, or if you’re sweet enough already skip this ingredient.

METHOD:

  • Pre-heat oven to 180 degrees Celsius

  • Drain and rinse the chick peas well

  • Pit the dates

  • Add all ingredients except the choc chips to a food processor and mix until well combined - it should resemble a dough texture.

  • Fold choc chips through mixture and then using a spoon scoop into your hand and roll into desired sizes

  • Place cookie balls on a lined baking tray and flatten gently with your fingers or a fork

  • Add the cookies to the oven for 15 minutes or until golden brown.

  • Store in the fridge
